How To Make Keto Coffee Ice Cream:
- Whisk. Whisk the yolks, syrup, and salt together until well combined. Set aside.
- Heat. Add almond milk, cream, and instant coffee to a saucepan, and heat to a simmer. Remove from heat.
- Temper. Slowly pour the hot cream mixture into the egg mixture, whisking constantly and vigorously. (This is called tempering and prevents the egg from scrambling.)
- Heat again. Move the whole mix back to a saucepan and heat to 170 degrees F. Be careful not to overheat!
- Chill. Remove mixture from heat and chill for at least 4 hours, or until very cold.
- Churn. Pour the cold custard into a prepared ice cream maker bowl and churn to the consistency of soft serve.
- Freeze. You can serve right away, but if you prefer a firmer sugar free coffee ice cream recipe, freeze in a freezer-safe container for a firmer texture.

- 5 large Egg yolks
- 1/2 cup Wholesome Yum Sugar-Free Vanilla Syrup
- 1 pinch Sea salt
- 1 1/2 cups Unsweetened almond milk
- 1 cup Heavy cream
- 2 tbsp Instant coffee (regular or decaf)
Instructions

In a medium bowl, whisk together the egg yolks, syrup, and sea salt, until combined and light yellow in color. Set aside.

In a medium saucepan, whisk together the almond milk, cream, and instant coffee. Heat over medium heat, whisking occasionally, until it just starts to simmer. Remove from heat.

Very slowly, pour the hot cream mixture into the egg yolk mixture while whisking constantly. (Doing this in a thin stream and whisking vigorously will prevent scrambling the egg.)
Once the custard is combined and smooth, transfer the mixture back to the saucepan. Return to the stove over low heat and heat, stirring frequently, until the mixture reaches 170 degrees F (76 degrees C), about 3-5 minutes.

Remove from heat. Cover and refrigerate for at least 4 hours, until very cold (below 40 degrees F (4 degrees C)).

Pour the cold custard mixture into a pre-frozen ice cream maker bowl. Churn according to manufacturer instructions, usually about 20-25 minutes, until ice cream is the texture of soft serve.

Serve immediately, or for firmer ice cream, transfer to a freezer container and freeze until solid.

Yes, you’d have to manually stir every 30 minutes for 4-6 hours when freezing.

I would think using the 2 zip bag/shake method might work well too. I was shocked at how well it worked with regular ingredients. Add 3 cups ice & 1/3c Kosher salt in large zip bag. Add your ice cream ingredients into a smaller zip bag & remove as much air as possible when sealing. Put smaller bag into large zip bag & close. Shake vigorously about 10 minutes – you can freeze for firmer ice cream
