Let’s make these gluten-free almond cookies! Here’s how to make them:
- Beat butter and sweeteners. Use a hand mixer to beat butter, Besti Monk Fruit Allulose, Besti Brown Monk Fruit Allulose, sea salt, egg, and almond extract.
- Add almond flour. Mix in Wholesome Yum Almond Flour until combined. The dough will be crumbly.
- Form cookies. Scoop dough onto the parchment paper lined cookie sheet and flatten with the palm of your hand. Top with a few almond slivers.
- Bake. Your Italian almond cookies are ready when they are golden. Let them cool to firm up.

Are almond flour cookies keto?
Almond flour cookies are not always keto, depending on what else is in them. Some almond flour cookie recipes use regular sugar, or even maple syrup, to sweeten, which would not be keto friendly.
Fortunately, these cookies are keto! Each cookie has just 1.2 grams net carbs.
(By the way, if you do want to use a different gluten-free almond flour cookie recipe that calls for maple syrup, you can easily swap in Wholesome Yum Keto Maple Syrup to make it keto.)
What kind of flour should I use?
We recommend using a super-fine almond flour for the best texture.
What kind of sweetener can I use?
These keto almond butter cookies work best with a blend of Besti brown sweetener and Besti monk fruit allulose blend, which will give them the best soft and chewy texture, as well as brown sugar flavor.
You could also use a crystallized allulose or crystallized erythritol. If you want to use something else, check the keto sweetener guide for more sweetener options and conversions.
Can I make these dairy-free?
Yes, you’ll need to swap out the butter for your favorite dairy-free butter alternative. Coconut oil works as well.

Can you freeze Italian almond flour cookies?

- 1/2 cup Butter (softened)
- 1/2 cup Besti Monk Fruit Allulose Blend
- 1/4 cup Besti Brown Monk Fruit Allulose Blend
- 1/4 tsp Sea salt
- 1 large Egg
- 1 tsp Almond extract
- 2 cups Wholesome Yum Blanched Almond Flour
- 2 tbsp Sliced almonds
Instructions

Preheat the oven to 350 F (176 degrees C). Line a cookie sheet with parchment paper.

Using a hand mixer, beat together the butter, Besti Monk Fruit Allulose Blend, Besti Brown Monk Fruit Allulose Blend, sea salt, egg, and almond extract for about 2 minutes, until smooth.

Mix in the almond flour, until well combined.

Using a small cookie scoop, scoop the cookie dough onto the lined cookie sheet. Flatten each cookie with the palm of your hand to about 1/3 in (.8 cm) thick. (You can make them thicker or thinner to your liking). Place a few slivers of almond on top of each cookie.

Bake for 12-15 minutes, until golden. Cool completely to let the almond cookies firm up.
