What Is Fathead Pizza?
Fathead pizza is pizza that uses a keto pizza crust made from mozzarella cheese, cream cheese, egg, and either almond flour or coconut flour. This combination creates an incredible texture that very closely resembles a wheat pizza dough.
You can find the basic fathead pizza recipe here. If you’re new to this dough, you might also like the fathead dough guide in the Easy Keto Cookbook.
How To Make Fathead Pizza Dough
Making this dough is different from a traditional wheat version, but it’s not difficult. It just takes some practice. Here is how to make fathead pizza dough:
- Melt cheese. In a large bowl, combine mozzarella cheese and cream cheese. Microwave for 90 seconds, stirring half way through, and stir after heating, until well incorporated.
- Finish fathead pizza dough. Add the Wholesome Yum Almond Flour and eggs to melted cheese. Knead the dough with your hands until a dough forms.
TIP #1: If the dough becomes hard to work with, microwave for 10-15 seconds to soften it. Do not overheat – you don’t want to cook it.
TIP #2: If the dough is very sticky, chill it in the fridge and oil your hands when ready. Both of these steps will make it easier to work with.
How To Make Keto Deep Dish Pizza
Once you have the dough, this keto friendly pizza is a breeze:
- Form deep dish fathead pizza crust. Press the dough into a springform pan, and spread it over the pan, pressing the dough up the sides.
- Add string cheese for stuffed crust. Place the mozzarella cheese halves along the edge of the dough and fold over to cover, pressing down the edges. Poke holes along the bottom of the crust, using a fork or toothpick.
- Bake. Poke holes in any spots where bubbles form and return to bake until golden brown.
- Top your easy keto pizza. Add marinara, cheese, sausage, and pepperoni to the crust.
- Finish. Bake again, until the cheese melts.

Both me and my husband liked it. I made it in a glass dish I next time i’ll make it in a circle cake pan to see if that makes a difference.
Jody
Turned out amazing! Pizza is my favorite thing and this recipe allows me to indulge without blowing my keto diet.
Erin
This sounds wonderful! Can’t wait to make it this weekend and love the tip about freezing it.
I wanted to see if you could give the nutritional information on just the crust as I’d like to do some different toppings than what’s listed.
Thank you!
Erin
Never mind. I just found the crust only recipe. LOL! Thanks again. Loving your site and will be ordering the cookbook. 🙂
Maya | Wholesome Yum
Hi Erin, We don’t have separate nutrition info for the deep dish version, you’d have to enter the ingredients into an online calculator. Maya does have a standalone fathead pizza crust here, but it’s not deep dish.
Cassie
Can I use a cast iron pizza pan for this recipe?
Maya | Wholesome Yum
Hi Cassie, Yes, you can, but you might need a lower oven temperature to prevent burning the bottom and the cook time might vary. Also, it’s still best to line the bottom with parchment paper and grease the sides.
Mary
Where do you find keto sausage and pepperoni? I gave up eating it because every brand at the store has dextrose or corn syrup in the ingredients.
Maya | Wholesome Yum
Hi Mary, Natural food stores usually have cleaner sausage and pepperoni.
Sherry G
So easy to make and really good too. Even my picky husband loved it.
Shabnum
Could you please give the cup measurements in oz or grams? Am in the U.K. and I don’t understand the cup measurement. Thanks
Maya | Wholesome Yum
Hi Shabnum, You can switch to metric measurements right on the recipe card.
Martinez
Excuse my ignorance is it 403cal per slice?
Maya | Wholesome Yum
Hi Martinez, Yes, nutrition info is per large slice (1/6 of the whole pizza).
Patty
So easy-so delicious!!!
Shana Schacher
Any chance this would work in a cast iron skillet. I am really excited to make it but do not have a springform pan…..
Maya | Wholesome Yum
Hi Shana, Yes, it probably would, but I’d recommend lining it with parchment paper on the bottom and greasing the sides well. I’m not sure if it would stick otherwise.
